Zucchini.  It's a fun name to say! Thank goodness because at this time of year, the ever versatile zucchini is readily available, inexpensive and, if you have a garden, most likely overflowing out of your refrigerator! Did you know that zucchini is technically a fruit?

How to Select

Choose firm, tender zucchini, bright green in color. (The bigger a zucchini gets the tougher it becomes with more seeds.) 

How to Store

Unwashed in the crisper section of your fridge. Store in perforated plastic bags or just poke a few holes in a plastic bag. Wash just before using. 

Nutritional Tidbits

High in Vitamin C. Low-calorie. A serving of zucchini provides 30% of the recommended daily allowance of Vitamin C.

Try some of these Top Ten Ways to Enjoy Zucchini from Fruits and Veggies, More Matters

1.) Add to Pasta. Zucchini is a great match for pasta! Simply slice or dice, sauté with a little olive oil and garlic, then toss in with your favorite shaped of cooked (whole-grain) pasta.

2.) Slice and Grill. Zucchini tastes great cooked on the grill! Cut thick slices so they won’t fall through the grill grates, lightly brush with olive oil, add a dash of salt then grill away! 

3.) Zucchini Burger. Grate zucchini and form into patties just as you would potato cakes. Use olive oil and lightly brown them on both sides.
